When they find out I am a vegan, people always ask me, "What do you eat?" and I don't know what to say because I eat a lot of things - really almost everything everyone else eats - just without meat, dairy, eggs, or honey. Here is a list of things I regularly make for dinner:
Tacos/burritos/breakfast burritos/quesadillas (I use beans instead of meat and I don't use cheese). For the quesadillas I use refried beans mixed with salsa (and sometimes veggies) folded into corn tortillas. For breakfast burritos I use beans, potatoes, salsa, and avocado.
Pasta: It's true that some pasta has eggs in it, though. Spaghetti marinara is a pretty common meal, usually with some bread and/or salad (most italian dressings are vegan).
Potatoes: mix them with veggies or peppers and onions, serve with a thick piece of wheat toast - also makes a good breakfast.
Veggie burgers: Make them at home or go to in-n-out and order the veggie (a burger with all the fixings, but no burger) and then add your own veggie patty. Yum!
Veggie dogs: Get the ones that say Veggie Dogs - the Tofu Dogs are not as good.
Pigs in a Blanket: Use Pillsbury croissants, veggie dogs, and mustard!
Soup: I like tomato soup, pasta fagoil, and pea (with no ham), but there are plenty of other soups you can make or buy.
Frito Pie: is like tacos, but you use veggie chilli and fritos, then top it with salsa, tomatoes, avocado, black olives, lettuce, onion, cilantro, etc. Yum.
Yaki Soba: Stir fry these noodles with veggies and soy sauce.
Samosas: You can buy frozen veggie ones and cook them in the oven. They are usually filled with potatoes, peas, and spices.
BBQ: You can make veggie burgers and/or hot dogs, but sometimes I just like to skip the grill and make corn on the cob, baked beans, and maybe a baked potato.
Chicken Strips: They sell these frozen chicken strips that you can cook in the oven. Serve them with garlic green beans and BBQ sauce to dip them in.
Veggie sandwiches: As long as you have a flavorful bread and some avocado, you're good to go. Subway's veggie delight with no cheese and no mayo is also good.
BLTs: It can be hard to fin the good vegan bacon, but it is really good fried in a pan with vegan butter. Add vegenaise to some toasted wheat bread, lettuce, tomato, and avocado and you have a great hot sandwich.
